Zhongtang Chajiao Fish Dumplings
Chajiao Fish Dumplings is a dish from Zhongtang, and made from dace in late autumn.Bones are removed, leaving the softest part of the fish and the meat is beaten to transparent. A bamboo is used to squeeze the eat into paper-thin layers. Fillings of the dumpling include lean pork, sausage, preserved duck kidney, shrimp, mushrooms and egg. The completed dumpling looks like a wonton and can be boiled for long periods. Besides being put in hotpots, they can also be served in soup. In banquets, this is usually used as the final course.
