The people in Machong like to catch wild Wedelia (a kind of crab) in fields and ditches, and use them to make porridge. The shell, claws and gills are taken off, leaving the meat and pinchers as the key ingredients. After being cleaned and dried, the crabs are placed in a container and seasoned with salt, oil, liquor and ginger for about two minutes. They are placed into the cooked porridge with peanuts and salted vegetables and cooked for another 10 minutes. Wedelia porridge is served with onions, soy sauce, and pepper, creating a rich and delicious dish that has a unique flavor.
